Mutton paya or simply “mutton meat” is a dish originated in Pakistan. In fact, the dish was considered as a delicacy for centuries. This recipe gained popularity in England, when the Duke of Gloucester dined at the court of the duke of Monmouth in the latter period. This was the first taste of Mutton Poya in the English tongue. The dish has been made a lot simpler and more tasty with the advent of modern and easy to use ingredients.
To prepare mutton paya, a mixture of half butter, half onions is boiled in half liter of water for about 20 minutes. Then, add salt to the water. Then a dish is prepared by adding coriander leaves, grated cheese and a dash of cumin seeds. Cook the whole mixture until the meat in brown. When the same is done, add the tomatoes and green chili powder and mix all these ingredients together with a wooden spoon.
After boiling the meat mixture, cover the same and keep it aside. Then, cut it into two pieces and remove the seeds from the stomach. Use a fork to prepare the second piece of mutton recipe in Urdu. Make sure that you chop it very fine. When the second piece of mutton is cut, add it to the boiling water and boil the same for approximately ten minutes.
Afterwards, prepare the sauce separately. In general, this sauce is prepared by mixing two teaspoons of turmeric along with five cups of water. Then, add the chopped coriander leaves and fry them in the same amount of oil for approximately three minutes. Finally, add a pinch of salt and fry the same in separate pans for about five minutes. This is basically stew made from mutton and goat legs.
The final step is to take 1 teaspoon of garlic from the ginger and grind them till they become a paste. Then, take the coriander leaves and crush them well using your fingers. Once crushed, grind them well in a big cardamom grinder. Once the ground coriander paste is ready, take one-fourth cup of this paste and mix it in the strained sauce. Then, take the cooked mutton along with the cooked garlic and hummus and serve.
Apart from the low flame method, mutton paya recipe is also one of the traditional methods of cooking in the traditional kitchens of Pakistan. But there are other methods which can be used. You can use the gas stove with a burner. This will give a good heat but not as good as the low flame method. So, when you feel that the meat is cooked, you can take it out of the oven. It may take you half an hour or more but it is worth it as the taste is so much authentic.
